Ingredients
- 6 eggs
- Salt to taste
- Pepper to taste
- 1/4 cup shredded low-fat mozzarella cheese
- 1/4 cup bell pepper, diced
- 1 small tomato, seeded and diced
- 12 to 14 pepperoni slices

Preparation
Step 1
1- Preheat oven to 350*.
2- Whisk together eggs, salt, pepper and cheese.
3- Add bell peppers and tomatoes and mix together.
4- Top with pepperoni.
5- Spray a 9-inch glass or ceramic baking dish with non-stick cooking spray. Pour mixture into dish.
6- Bake for 25 to 30 minutes, or until egg is firm.
