Ingredients

  • 8 - 6 inch corn tortillas
  • 1 2/3 cups shredded, cooked chicken
  • 8 oz shredded Monterey Jack Cheese
  • 10 oz can green chile sauce
  • 4 oz can diced green chiles
  • 1/4 cup water
  • 1/4 sour cream

Preparation

Step 1

1. Pre-heat oven

2. wrap tortillas in foil and place in hot oven

3. Mix chicken with 1 cup of the cheese (save rest for later) and set aside

4. Place enchilada sauce, water and sour cream in a blender and blend until smooth.

5. Spread some of the blended sauce on the bottom of a 9 x 13 glass baking dish (spray dish first with cooking spray

6. Spread chicken mixture on each of the tortillas and roll closed.

7. Place rolled tortillas on top of the mixture in the dish (seam side down), pour rest if sauce mixture over the tortillas, cover with foil and bake for 15 minutes

8. Uncover and sprinkle rest of cheese on top and bake for additional 8 minutes
