Ingredients

  • 2 cups uncooked rice (rinsed)
  • 3 1/2 cups boiled water
  • 2 Tbs. olive oil
  • 1 lb chicken pieces or 3 to 4 pieces
  • 4 oz tomato sauce
  • 1 tsp. onion powder
  • 2 Tbs. sliced Spanish Olives
  • 1 tsp. garlic powder
  • 2 Tbs. sofrito
  • 1 tsp. paprika
  • 1 packet of sazon culantro y achiote
  • salt to taste
  • 1 bay leaf

Preparation

Step 1

In a medium to small caldero or pot put in the uncooked chicken, olive oil, sofrito, olives, and saute for about 4 minutes. Then put the tomato sauce, onion powder, garlic powder, paprika, and sazon con culantro y achiote, mix all ingredients together. Then mix rice into all ingredients (mixing from top to bottom.) Then pour hot water just enough to cover the rice. Water should be 1/2 inch above rice level. Throw in your bay leaf, just right on top of rice. Boil uncovered, over high heat, mixing the rice once or twice, until water is absorbed (tip: not too dry, leave some water), after water is absorbed cover and let rice simmer over LOW heat for 20 minutes. Next, turn rice from bottom to top and let simmer for about another 10 minutes or less or until rice is tender. Once rice is tender remove bay leaf and serve with beans and platanos maduros.
