  • 15 ml olive oil 1 tbsp
  • 1 small onion, chopped 1
  • 1 small zucchini, diced 1
  • 1 tomato, diced 1
  • 250 ml tomato vegetable juice 1 cup
  • 250 ml chicken stock 1 cup
  • 2 ml sugar 1/2 tsp
  • 1 ml each dried oregano & basil 1/4 tsp
  • 125 ml corn kernels 1/2 cup
  • salt & pepper to taste -

Preparation

Step 1

In saucepan; heat oil over medium heat; cook onion and zucchini, stirring occasionally for about 3 minutes. Add tomato, tomato juice, chicken stock, sugar, oregano and basil; bring to boil. Reduce heat and simmer for 5 minutes. Add corn; simmer for 2 to 4 minutes or until heated through. Season with salt and pepper to taste.
