Ingredients
- 2 tbsp Vegetable Oil
- 1 lb. Chicken - boneless & skinless
- 6 oz Cream cheese - room temperature
- 2 tbsp Orange marmalade
- 2 tsp. Curry powder
- 1/4 tsp. White pepper
- 1/4 tsp. Salt
- 3 Tbsp. fresh chopped chives
- 3 Tbsp. Minced celery
- 1 cup Finely chopped almonds - toasted

Preparation
Step 1
In a medium skillet, heat oil. Saute chicken until done, up to 10 minutes. Let cool slightly, then dice. Set aside
In a mixing bowl, combine cream cheese, marmalade, curry, pepper and sat. Beat until smooth. Stir in chicken, chives and celery.
Shape into 1 inch balls and roll in almonds. Chill for at least 1 hour before serving.
May be refrigerated up to 2 days or frozen up to one month.
