Ingredients

  • 2 lb. boneless, skinless chicken breast, cubed
  • salt
  • pepper
  • 1/4 cup whole-wheat flour
  • 3 T. olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup balsamic vinegar
  • 6 T. firmly packed dark-brown sugar
  • 1/2 cup broccoli puree (steam florets, then puree in food processor or blender)
  • 6 ciabatta rolls
  • 6 large slices tomato
  • 1/2 - 1 cup mozzarella
  • fresh basil (optional)

Step 1

1. Sprinkle chicken with salt and pepper. Put flour in a plastic bag. Add chicken and shake to coat. Preheat oven to 350 F.
2. Warm oil in a large skillet over medium-high. Add chicken and cook till brown. Add garlic and cook one more minute.
3. Add chicken broth, vinegar, and brown sugar. Cover and simmer 10-15 minutes. Add puree and cook 3 more minutes.
4. Place rolls on a large baking sheet. To 6 bottom halves, add tomato slices (and basil if using); divide chicken among them and sprinkle with mozzarella. Bake 7 minutes.
