Balsamic Chicken Sandwich

Cookbook author Jessica Seinfeld shared this hearty sandwich, her husband Jerry's favorite! I tried it last night, and we all enjoyed it thoroughly!!!

Ingredients
- 2 lb. boneless, skinless chicken breast, cubed
- salt
- pepper
- 1/4 cup whole-wheat flour
- 3 T. olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup balsamic vinegar
- 6 T. firmly packed dark-brown sugar
- 1/2 cup broccoli puree (steam florets, then puree in food processor or blender)
- 6 ciabatta rolls
- 6 large slices tomato
- 1/2 - 1 cup mozzarella
- fresh basil (optional)

Step 1
1. Sprinkle chicken with salt and pepper. Put flour in a plastic bag. Add chicken and shake to coat. Preheat oven to 350 F.
2. Warm oil in a large skillet over medium-high. Add chicken and cook till brown. Add garlic and cook one more minute.
3. Add chicken broth, vinegar, and brown sugar. Cover and simmer 10-15 minutes. Add puree and cook 3 more minutes.
4. Place rolls on a large baking sheet. To 6 bottom halves, add tomato slices (and basil if using); divide chicken among them and sprinkle with mozzarella. Bake 7 minutes.
