Ingredients

  • Fluffy Peanut Butter Filling:
  • 1 box dark chocolate cake mix
  • 1/4 cup creamy peanut butter
  • 1 can ready-made chocolate frosting
  • 1 package mini peanut butter cups
  • 1/2 cup creamy peanut butter
  • 1 package (3 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup milk

Step 1

Prepare cake mix according to the package directions, adding peanut butter to the batter. Line 24 muffin cups with paper baking cups. Spoon batter into muffin cups, filling about 2/3 full. Bake 350 degrees until wooden pick inserted in center comes out clean, about 15-17 minutes. Remove cupcakes from pans; place on wire racks and cool completely.

Place Filling in icing bag fitted with a long thin tip. Insert tip from the top into each cupcake; gently pipe about 2 tsp filling into each cupcake. Spread frosting onto cupcakes. Cut 24 peanut butter cups into quarters; sprinkle over top of cupcakes.

In a medium bowl with a hand mixer, beat all ingredients at medium speed until smooth and creamy, about 2 minutes.
