Glorious Muffins

Ingredients
- 1 cup oat flour
- 1 cup coconut flour
- 1/2 cup almond flour
- 2 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/2 cup packed brown sugar alternative or 1 cup xylitol
- 2 tsp vanilla
- 2 sm zucchini shredded
- 2 carrots shredded
- 1 lg apple shredded (Optional)
- 1/2 cup coconut
- 1/2 cup pecans
- 4 eggs beaten
- 1/2 cup almond milk w/2 tsp vinegar
- 2/3 cup safflower oil or coconut oil

Preparation
Step 1
Add all dry ingredients and then all wet and fruit and veggies stir til combined. Put into jumbo muffin tins (with liners or spray pan) fill about 3/4 full, makes 9. One is a serving!!! These are the bomb hence the name I gave them "Glorious Muffins" bake for 30-35 minutes til toothpick inserted in center comes out clean at 350.
TIPS: The batter will be thick like a muffin batter, but if it appears too thick add a little more almond milk.
I use 1 1/3 cup spelt flour, 1/2 cup oat flour and 1/2 cup coconut flour. Then I increase the almond milk to 3/4 cup. I did not list it like this cause spelt is not technically P3 but P1.
Just add a fruit and you have a complete P3 breakfast
