Winter Minestrone Soup

Ingredients
- 3 Tbsp Olive Oil
- 1 Large Onion, chopped
- 1 Stalk Celery, chopped
- 2 Cloves Garlic, pressed
- 1 tsp Dried Basil
- 1/2 tsp Dried Oregano
- 1/2 tsp Ground Thyme
- 1/4 cup Pearl Barley
- 2 Medium Potatoes, peeled & diced
- 2 Carrots, diced
- 8 cups Chicken or Vegetable Stock
- 1 can Kidney Beans, rinsed and drained
- 2/3 cup Small Shell Pasta
- 1 7 oz can Tomato Paste
- Salt & Pepper to taste

Step 1
Heat oil in a large pot over medium heat. Add onion, celery, garlic and all spices. Cook til onion is soft.
Add stock, barley, potatoes and carrots. Bring to a boil, then reduce heat and simmer covered for 20 minutes.
Mix in beans, macaroni, and tomato paste. Simmer 20 minutes.
Season with salt & pepper.
