These are absolutely delicious!!! They do take some time however. Plan on being at the stovetop for around 30 minutes of cook time. But they are so worth it.

Ingredients

  • 4 Jalapeños, cut into rings (you can candy as many as you want though)
  • 1 cup granulated sugar
  • 1-2 cups water (I usually go 1:1 ratio, sugar:water)
  • If you use both green and red jalapeños, they make a great dish for a christmas party

Preparation

Step 1

1. Add sugar and water to a medium saucepan. Make sure the sugar is scattered evenly. Do NOT stir.

2. Heat on low until the mix forms into a syrup. Once sugar is about completely dissolved, you can stir.

3. Add the jalapeno slices and cook in the syrup for 3-4 minutes. Remove the jalapeños and let cool for a couple minutes.

4. Repeat this process until the peppers are thickly candied. You will see the color of the jalapeños change when they are getting close to finished.

5. You can "sand" the peppers with a little sugar if you want, but do it before they have cooled.

6. Serve when cooled.
