One-Pot Chicken Simmer

Ingredients

  • 1 tbsp (15mL) Peri Peri spice rub
  • 1 pkg (800g) boneless, skinless chicken thighs (about 8)
  • 1 tbsp (15mL) extra virgin olive oil
  • 8 slices Serrano ham, chopped
  • 1 onoin, chopped
  • 1/4 cup (50mL) brandy or chicken broth
  • 1 can (280z/796mL) diced tomatoes, drained
  • 3 cloves garlic, minced
  • 1/3 cup (75mL) chopped fresh corriander

Step 1

1. Sprinkle chicken all over with spice rub.

2. In a large nonstick skillet, heat oil over medium-high heat and brown chicken thighs on both sides and remove to plate. Add ham and onion and cook, stirring for 3 mins or until starting to brown. Add brandy and cook, stirring for about 2 mins or until brandy is evaporated. Stir in tomatoes and garlic and bring to a boil. Return chicken to skillet and sprinkle with coriander. Reduce heat to medium, cover and cook for about 10 mins or until chicken is no longer pink inside and juices run clear when pierced.
