Ingredients
- 18 pitted Medjool dates, split
- 1 tbsp. olive oil
- 6 oz. Gorgonzola cheese
- 1 cup seasoned breadcrumbs
- 1 cup Parmesan Reggiano cheese, grated
- 6 oz. Gorgonzola cheese
- 1/2 lb. Italian ham, thinly sliced

Preparation
Step 1
Preheat oven 400 degrees.
Using 1 tbsp. olive oil, rub each date to coat.
Next gently open each date without breaking the spilt. Set aside.
In a medium size bowl combine 1 cup seasoned breadcrumbs with 1 cup freshly grated Parmesan cheese; stir together and set aside.
On a cutting board, lay out Italian ham slices.
Add to date center 1-1 1/2 tsp. of Gorgonzola cheese.
Gently press the date back together and roll Gorgonzola stuffed date in breadcrumb mixture. Dates will grab a bit of crumb mixture.
Wrap each date with a piece of Italian ham. Set on parchment lined cookie sheet. Repeat until finished, and then bake.
Cooking time 10-12 minutes.
