Sicilian Pizza Crust and Sauce

Ingredients
- Marinara Sauce
- 1 tablespoon olive oil
- 2 cloves minced garlic
- 1 14 ounce can of diced tomato (the original recipe calls for San Marzano)
- 1/2 teaspoon sugar
- 1/4 teaspoon oregano
- 1/4 teaspoon basil
- 1/8 teaspoon salt
- Dough
- 1 cup warm water (about 110 degrees F)
- 1 package (.25 ounce) dry active yeast
- 2-3/4 cups all-purpose flour
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 tablespoons olive oil

Preparation
Step 1
Marinara Sauce:
In a small saucepan heat the oil and cook the garlic for 1 minute. Add remaining ingredients and simmer with a tilted lid for about 30 minutes, stirring occassionally.
Dough:
**Can be made in bread machine or by hand:
To make the crust:
Heat your water until its warm enough to stick your pinkie in it comfortably for a second or two. About 110-115 degrees if you want to use a thermometer. Then mix in the sugar and yeast and let it sit about 10 minutes until the yeast is foamy. (If it doesn't get foamy then your water was too hot or not hot enough)
In the meantime mix flour and salt.. Once the yeast mixture is ready then add the oil and yeast mixture to the flour. Stir until it forms a nice ball.
Knead by hand or with a dough hook for about 5 minutes. Let the dough rest, covered, for 90 minutes.
Preheat oven to 500. Once the dough is ready spread it in a rectangular pan coated with cooking spray (I like to use the large glass pan that is 15x9)
Top the crust with your sauce and bake for about 10-12 minutes. Remove from the oven and add toppings and cheese and return to the oven for about 5-8 more minutes (start checking around 5 minutes to make sure it doesn't get burned!)
