Ingredients
- 1 large onion, thinly sliced
- 1 med red bell pepper, cut into strips (1.5 cups)
- 1 med green bell pepper, cut into strips (1.5 cups)
- Beef flank steak - 2 pounds
- 2 T chili powder
- 1 t dried oregano leaves
- 2 t's dried minced garlic
- 1 t salt
- 2 T's lime juice
- 1 cup beef broth
- 2 cups uncooked long grain white rice
- 1 can (15 oz) black beans, drained and rinsed.

Preparation
Step 1
1. Spray 4 qt slow cooker with cooking spray. In cooker, place onion and peppers. Top with beef. Sprinkle with chili powder, oregano, garlic and salt. Drizzle with lime juice. Add Broth.
2. Cover and cook on low heat for 8-10 hours.
3. About 20 minutes before serving, cook rice as directed.
4. Remove beef from cooker, place on a cutting board and shred beef with forks. Return to cooker and mix well. Stir in the black beans. Increase heat to high. Cover and cook for 15 minutes or until thoroughly heated.
5. Serve beef and sauce over rice.
