Ingredients

  • 1 tbsp. veggie oil
  • 1 clove garlic, minced
  • 2 med. onions, sliced
  • 1 can (14 oz.) whole tomatoes or equivalent fresh or frozen
  • 1 can (19 oz.) red kidney beans, drained
  • 1 can (16 oz.) chick peas
  • 1/2 tsp. dried oregano
  • 10 oz. fresh spinach, washed
  • 1/4 tsp. fresh ground pepper

Preparation

Step 1

Heat oil over med. heat; cook garlic and onions, stirring occasionally for 3 mins. or till softened. Add tomatoes, breaking up with spoon. Add kidney beans, chick peas, and oregano; bring to simmer. Add spinach, cover, and simmer till spinach is wilted, about 2 mins. Season with pepper to taste. For a change of pace, add some cooked turkey with the onion and add chili powder.
