Ingredients

  • 2 (1/4-ounce) envelopes active dry yeast
  • 1/2 cup warm water (105° to 115°)
  • 2 tbs butter
  • 3 tbs sugar
  • 1 1/4 cups milk
  • 1 1/2 tsp salt
  • 4 1/2 to 5 cups all-purpose flour

Step 1

Combine yeast and warm water in a 1-cup liquid measuring cup; let stand 5 minutes .
Combine butter and next 3 ingredients in a heavy saucepan; cook over medium heat, stirring constantly, just until butter melts. Pour into a large bowl; cool. Stir in yeast mixture; gradually stir in enough flour to make a soft dough .

Turn dough out onto a wellfloured surface, and knead until smooth and elastic (about 5 minutes). Place in a well-greased bowl, turning to grease top.

Cover; let stand in a warm place (85°), free from drafts, 15 minutes.

Divide dough in half, shape each portion into 12 bails, and place in 2 greased 9-inch square pans. Cover
and let rise in a warm place, free from drafts, 15 minutes.

Bake at 425° for 10 to 12 minutes.
