- 2 cups flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups buttermilk
- 3 tablespoons unsalted butter, melted and cooled
- 1 large egg
Whisk the flour, sugar, baking powder, baking soda and salt together in large bowl. In a medium bowl, whisk the buttermilk, melted butter and egg together. Make a well in the center of the flour mixture, pour the buttermilk mixture into the well, and gently whisk together until just mixed with a few lumps remaining - do not overmix.
Use 1/4 cup of batter per pancake.
Keep warm on rack in 200 degree oven.
