  • 1 packet of yeast
  • 1/2 cup warm water.
  • Let it sit until foamy.
  • In another bowl 3 cups of sprouted spelt flour
  • 1 1/2 teaspoon sea salt

Preparation

Step 1

1teaspoon xyla, 1 packet of yeast 1/2 cup warm water. Let it sit until foamy. In another bowl 3 cups of sprouted spelt flour 1 1/2 teaspoon sea salt, mix together.. Make a well and add the yeast in the middle spooning the flour in as you mix (I use a wooden spoon) slowly mix 1 cup of water or less until you incorporate all the flour. In a larger bowl that has been coated with olive oil ( this is the stickler for P1 but if you don't coat the dough will stick and not really rise) cover with suran wrap & a towel and let it sit until it has pretty much doubled. Flour a board or counter and pour dough out. flour your handsas well and kead until the dough doesn't stick to your hands. You can feel when it is ready. Now pinch off small balls and place on a plate. cover with suran wrap and let rise about 10 mins. take a couple of balls at a time pat them down, roll them out in circles and place 2 or 3 at a time. bake at 500 degrees (yes, 500) 3-4 mins, flip bake another 1-2 mins.... I posted that there is a yound woman on youtube who makes the pita exactly how I do right down to the recipe. If you haven't made pita bread before, it is a great video. It is easier to watch someone make it and then do it. Her youtube channel is Dedemed.. just plug in pita bread and look for her channel.. These are great tasting...
