- 1 tablespoon mild spanish paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cayenne
- Kosher salt and freshly ground black pepper
- 1/2 pound 80% lean ground chuck
- 1 tablespoon canola oil
- 8 thin slices pepper jack cheese

Step 1
1. ehat your grill or griddle to high for direct grilling.
2. Combine the paprika, thyme, garlic, and onion powders, cayenne, 2 teaspoons salt, and 2 teaspoons black pepper in a small bowl.
3. Form meat into 4 uniform fairly flat patties no thicker than 3/4 inch and then make a deep depression in the center of each with your thumb. Brush on both sides with the oil. Season one side of each of the patties with the spcie mixture, making sure to rub the spices into the meat.
4. Grill the burgers, spice rub side down, until slightly charred and the spices have formed a crust, about 2 minutes. Season the top side with salt and pepper, turn over the burgers so taht they are over medium jheat, and continue cooking to desired doneness, about 6 minutes for medium. During the last minute of cooking, put 2 slices of pepper jack on each burger, cover the grill, and cook until the cheese has completely melted. Transfer the burgers to a warm platter.
