  • 1 cup 1 cup canned pumpkin
  • 2 tablespoons 2 tablespoons light corn syrup
  • 2 1/2 2 1/2 2 1/2
  • teaspoons teaspoons pumpkin pie spice
  • 9 ounces 9 ounces white chocolate chips
  • 7 ounces 7 ounces marshmallow fluff
  • 1 teaspoon 1 teaspoon vanilla extract

Preparation

Step 1

Melt butter over medium heat in a medium saucepan.

Stir in the sugar, milk, pumpkin, corn syrup, and pumpkin pie spice and increase heat to medium-high.

Cook, stirring constantly, until mixture comes to a boil. Continue cooking, stirring constantly, until a candy thermometer reads 234 degrees F (soft-ball stage).

Remove pan from heat. Stir in white chocolate, marshmallow fluff, and vanilla until well blended.

Line a 9x9 baking dish with aluminum foil and lightly coat with cooking spray. Spread fudge into the dish and let stand 2 hours or until completely cool. Cut fudge into squares.
