- cupcup evaporated milk
- 1cup1 cup canned pumpkin
- 2tablespoons2 tablespoons light corn syrup
- 2 1/22 1/22 1/2
- teaspoonsteaspoons pumpkin pie spice
- 9ounces9 ounces white chocolate chips
- 7ounces7 ounces marshmallow fluff
- 1teaspoon1 teaspoon vanilla extract

Preparation
Step 1
Melt butter over medium heat in a medium saucepan.
Stir in the sugar, milk, pumpkin, corn syrup, and pumpkin pie spice and increase heat to medium-high.
Cook, stirring constantly, until mixture comes to a boil. Continue cooking, stirring constantly, until a candy thermometer reads 234 degrees F (soft-ball stage).
Remove pan from heat. Stir in white chocolate, marshmallow fluff, and vanilla until well blended.
Line a 9x9 baking dish with aluminum foil and lightly coat with cooking spray. Spread fudge into the dish and let stand 2 hours or until completely cool. Cut fudge into squares.
