  • 1/2 cup margarine
  • 3 eggs
  • 1 1/4 cups sugar
  • 1 cup sweetened coconut flakes
  • 3/4 cup buttermilk
  • 1 teaspoon vanilla
  • 4 heaping tablespoons flour
  • 1 unbaked pie crust (deep dish)



Step 1

Preheat oven to 350. Melt margarine; set aside to let cool slightly. In a large bowl, beat eggs until smooth. Stir in sugar & flour until blended. Stir melted margarine, buttermilk & vanilla. Fold in coconut. Pour mixture into pie crust. Bake for about 40 minutes or until filling is set. Serve warm.
