Peach Melba Bread Pudding

Ingredients
- 4 cups White bread crumbs
- 1 16 oz Sliced peaches in its own juice drained and chopped
- 1/4 cup Peach juice from peaches
- 1/2 cup Seedless raisins
- 1 1/4 cups Skim milk
- 1 8 oz Egg Beaters® 99% egg substitute
- 1/2 cup Sugar
- 2 Tbsp. Margarine
- 1 tsp. Vanilla extract
- 1/2 tsp. Cinnamon
- 1/2 cup Seedless Raspberry preserves - warmed

Preparation
Step 1
Heat oven to 350.
In a greased 2-quart casserole, combine bread cubes, peaches and raisins and set aside.
In a medium bowl, combine reserved peach juice, milk, egg product, sugar, margarine, vanilla and cinnamon
Pour over bread mixture
Bake 45 - 50 minutes or until knife inserted in center comes out clean.
Serve warm topped with preserves.
