Ingredients

  • 2 1/2 cups Heavy cream
  • 8 egg yolks
  • 1/3 cup Sugar
  • Pinch Salt
  • 2 sticks Cinnamon
  • 1 tsp. Vanilla

Preparation

Step 1

Heat cream until hot. Mix egg yolks, sugar and salt and pour into hot cream slowly. Add vanilla. Pour into ramekins. Place ramekns in pan of hot water in oven. Bake at 300 degrees for 35-40 minutes til a toothpick comes out clean.

Sprinkle top with brown sugar and cinnamon. Use a blow torch on the brown sugar to crystallize it. Serve.
