Ingredients

  • 1 ) 4 boneless chicken breasts halves
  • 2 ) 1/4 cup all purpose flour
  • 3 ) 3 tablespoons butter
  • 4 ) 3 tablespoons olive oil
  • 5 ) 1/2 cup Marsala wine
  • 6 ) 1/2 teaspoon salt
  • 7 ) 1/2 teaspoon dried basil
  • 8 ) 1/4 teaspoon pepper
  • 9 ) 4-8 ounces fresh mushrooms, sliced
  • 10 ) package of pasta or rice

Step 1

Pound chicken to "1/4" thickness between 2-sheets of parchment paper. Combine flour, salt, pepper, basil and mix well. Heat oil and butter in heavy non-stick skillet over medium high heat. Dredge chicken in seasoned flour mixture. Cook chicken until lightly browned, 4 minutes. Turn chicken and add mushrooms around the chicken pieces. Cook about 2-3 minutes more, until lightly browned, stir. Add Marsala wine to pan. Cover and simmer 10 minutes. Serve with hot cooked pasta or rice.
