Ingredients

  • THE MARINADE:
  • 1 cup white-wine vinegar
  • 1/4 cup peanut or canola oil
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 TBS sugar
  • 1 small onion
  • 1 TBS fresh thyme
  • THE POTATOES:
  • 1 lb fingerling potatoes, washed
  • 3 minced garlic cloves
  • 3 sprigs fresh parsley
  • 2 TBS kosher salt

Preparation

Step 1

Whisk together marinade ingredients in a bowl.

In large saucepan,combine potatoes, garlic parsley and salt. Add enough water to cover potatoes, bring to boil. Lower heat to simmer; cook about 8 minutes. Strain and cool.

Slice potatoes into 1/4 " thick rounds. Add marinade and let sit 20 minutes.

Transfer to a saute pan and cook over high heat for 30 seconds.

Serve with Weiner Schnitzel.
