Ingredients

  • 5 cups chopped Tomatillos
  • 1 1/2 cups seeded, chopped long green chilies
  • 1/2 cups seeded jalepeno peppers finely chopped
  • 4 cups chopped onion
  • 1 cup bottled lemon juice
  • 6 cloves of garlic finely chopped
  • 1 TBL ground cumin
  • 3 TBL oregano leaves
  • 1 TBL salt
  • 1 tsp pepper

Preparation

Step 1

Combine all ingredients in large saucepan and stir frequently over high heat until mixture begins to boil, then reduce heat and simmer for 20 minutes, stirring occasionally. Ladle into pint jars within 1/2 inch of top and put lids on. Hot water bath for 20 minutes.

You can use green tomatoes in place of the tomatillos. Last year I experimented with it, and did 2 parts tomatillos and 1 part tomatoes, and it worked great. This year I had enough tomatillos that I didn’t need to use green tomatoes. And the yield is pretty close to on. I tripled the recipe and got 14 pints.
