- 1 2/3 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 3/4 teaspoon ground ginger
- 3/4 teaspoon ground nutmeg
- 1 cup packed light or dark brown sugar
- 1/2 cup vegetable or canola oil
- 2 large eggs, at room temperature
- 1 1/2 cups canned solid pack pumpkin puree

Step 1
1. Preheat the oven to 350. grease and flour a loaf pan or line with parchment paper; set aside.
2. In a medium size bowl, combine the flour, baking soda, baking powder, salt, and spices.
3. In another medium size bowl, combine the sugar, oil, eggs, and pumpkin. Stir until well combined. Add the flour mixture to the pumpkin mixture and continue to stir until just blended. Pour the batter into the prepared pan. Bake until a toothpick insterted into the center of the pan comes out clean, 50 to 55 minutes.
4. Cool the loaf in the pan for 10 mintues before transferring to a rack to cool completely. Wrap tightly with plastic wrap and place in a zipper-top plastic bag.
