Ingredients

  • 1 cabbage
  • 1 lb ground turkey
  • 3 Tbsp Italian Sausage seasoning
  • 1 large zucchini
  • 2 medium carrots
  • 1 onion
  • 1 pepper
  • 1/2 cup brussels sprouts
  • 1-2 cups fresh spinach
  • 2 cans diced tomatoes [drained]
  • 1/4 cup chicken stock
  • 1/4 cup unsweetened almond milk
  • 1 Tbsp coconut oil [melted]
  • 1 tsp salt
  • 1 tsp garlic
  • 1/2 tsp black pepper

Preparation

Step 1

Preheat oven to 425

Chop cabbage into large strips and mix with coconut oil, salt, pepper, and garlic

Divide between two large casserole dishes and pace in oven for 25 mins or until slightly browned

In large pan combine ground turkey and italian sausage seasoning [plus some water to prevent sticking], cook until turkey is completely done

Chop up veggies [except spinach and tomatoes] and combine with ground turkey
Combine stock and almond milk and pour over turkey + veggies

Remove cabbage from the oven and lower oven temp to 350

Divide turkey mixture between the two dishes and bake for 25 minutes
Cover with spinach and diced tomatoes
Bake for another 15-20 minutes or until done to your preference
