Ingredients
- Marinade:
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 3 garlic cloves, sliced
- 2 tsp chopped rosemary
- salt and freshly ground pepper
- 2.5 lbs hanger steak
- Garnish:
- 8 cups arugula
- halved cherry tomatoes
- julienned red or yellow pepper slices
- 1 lemon, cut in half
- Kosher salt
- 2 tbsp. extra virgin olive oil
- 2 oz. shaved or petal parmesan

Preparation
Step 1
Combine ingredients for marinade. Toss in Ziploc bag with Hanger steak and leave to marinate for at least 2 hours or overnight in fridge. Season with salt just before grilling.
Spread arugula topped with tomatoes and pepper on a platter. Sprinkle with 1 tsp. freshly squeezed lemon juice and Kosher salt.
Grill steak about 5-6 mins. each side for medium-rare or longer as desired. Let rest 5 mins., then cut down on the diagonal into 1-inch thick slices.
Place over salad, sprinkle with more lemon juice, salt, pepper and olive oil. Scatter Parmesan all over. Serve with slices of crusty bread.
