Banana-Cranberry Oat Bars

Ingredients
- 1/2 cup old fashioned rolled oats
- 1/3 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 10 tablespoons unsalted butter, at room temperature
- 1/4 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 3/4 cup mashed ripe banana
- 1/2 cup dried cranberries

Preparation
Step 1
1. Preheat the oven to 350. Grease and flour an 8 inch square pan or line with parchment paper; set aside.
2. in a medium size bowl, combine the oats, flour, baking powder,a nd cinnamon.
3. In the bowl of an electric mxier, beat the butter and both sugars on medium speed until light and fluffy. Add the egg and vnailla, and mix again until blended. add teh oat mixture and mix on low speed until comionbed, scraping down the sides of the bowl if necessary. Fold in the banana and cranberries. Pour the batter into the prepared pan. bake until a toothpick inserted into the center of the bars comes out clean, 25 to 28 mintues.
4. Let the bars cool in teh pan for 10 mintues. Cut into 16 squares and transfer to a rack to cool completly. Wrap the bars individually with waxed or parchment paper or plastic wrap, seal with tape, and pack in a zipper top plastic bag or other container. Alternatively, layer unwrapped bars in an airtight container, separating the layers with waxed or parchment paper.
