Ingredients

  • 2 2 2 cups bread crumbs
  • 1 1 1 pound lean ground beef
  • 1 1 1 pound lean ground pork
  • 1 1 1 egg, slightly beaten
  • 3 3 3 tablespoons fresh parsley, chopped
  • 1 1 1 medium onion, chopped
  • 3 3 3 cloves garlic, chopped or pressed
  • 1 1 1 stalk celery, finely chopped
  • 1/2 1/2 1/2
  • teaspoon teaspoon thyme
  • 1/2 1/2 1/2
  • teaspoon teaspoon pepper
  • 1 1/2 1 1/2 1 1/2
  • teaspoons teaspoons salt
  • Gravy
  • 1/2 1/2 1/2
  • cup cup onion, chopped
  • 3 3 3 tablespoons flour
  • 1 1/3 1 1/3 1 1/3
  • cups cups beef broth, (use some juices from pan)
  • 1 1 1 tablespoon fresh parsley, chopped
  • 3 3 3 tablespoons butter
  • 1/4 1/4 1/4
  • cup cup red dry wine

Preparation

Step 1

Preheat oven to 350 degrees F. Mix all ingredients together. Shape into a loaf pan. Bake for 1.5 hours. If desired, spoon onion gravy over baked meatloaf slices. Onion Gravy Saute 1/2 cup of onion in 3 Tbsp of butter until slightly brown. Stir in 3 Tbsp of flour and mix 1 and 1/3 cup of beef stock,1 Tbsp of minced parsley and 1/4 cup dry red wine. Simmer for 3-5 minutes, stirring constantly. Serve with potatoes.
