Ingredients

  • 1 large ripe tomato, seeds squeezed out, large dice
  • 1 avocado, seeded, peeled, medium dice
  • 1 small red bell pepper, seeded, medium dice
  • 1 small red onion, small dice
  • 1 large head romaine, chopped, or 1/2 pound mixed greens
  • 1/3 cup picked flat leaf parsley leaves
  • 1 tablespoon white balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • kosher salt
  • freshly ground black pepper
  • 1/4 cup toasted pine nuts, optional

Preparation

Step 1

In a large bowl combine the tomato, avocado, bell pepper, onion, greens, and parsley. Using a small container with a lid, or a bowl with a whisk, combine the vinegar with olive oil and shake, or whisk until emulsified. Lightly dress the salad, using just enough to taste. Season to taste and serve immediately with toasted pine nuts.

Serve as a first course to *Citrus Baked Halibut with Fresh Thyme* and *Balsamic Glazed French Green Beans with Toasted Almonds*.
