Lemon Roasted Potatoes w/ Oregano

Ingredients
- 2 lb large russet potatoes, peeled
- 1/2 cup olive oil
- 1/4 cup fresh lemon juice
- 1 clove garlic, minced
- 2 tsp dried oregano
- sea salt and fresh ground pepper

Step 1
Preheat oven to 400.
Cut the potatoes in half lengthwise, then cut each piece in half crosswise. Arrange the potatoes in a single layer in a 9x13 baking dish. Add the olive oil, lemon juice, garlic and oregano. Season to taste w/ salt and pepper. Using your hands, toss the potatoes to coat thoroughly with the oil and seasonings. Pour 1 cup water into the pan.
Bake, uncovered, for 30 minutes. Turn the potatoes and continue to bake until tender when pierced with the tip of a knife, 15-30 minutes longer. The potatoes will be just lightly browned in places. Let stand in the baking dish for 10 minutes before serving.
