Ingredients

  • 1 1/4 cups ketchup
  • 1/4 cup Worcestershire sauce
  • 1/4 cup light brown sugar
  • 4 teaspoons soy sauce
  • 2 cups fresh crumbled bread
  • 1/2 cup milk
  • 2 medium onions, 1 sliced into rings and 1 finely chopped
  • 2/3 cup finely chopped celery
  • 1 tablespoon finely chopped garlic
  • 1/4 cup finely chopped parsley
  • 1 tablespoon dry mustard
  • 2 teaspoons fresh thyme, or 3/4 tsp. dried
  • 3 large eggs
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 3 pounds lean ground beef or venison
  • 6 slices bacon, optional

Step 1

Heat oven to 400 degrees. Stir ketchup, Worcestershire sauce, brown sugar, and soy sauce together; set aside. Soak bread in milk for minutes. Combine chopped onion, celery, garlic, parsley, mustard, thyme, eggs, salt and pepper in large bowl. Add soaked bread, meat and 1/3 cup of ketchup sauce and toss gently with your hands. Transfer to 16x5" loaf or deep casserole dish (sprayed with Pam). Coat w/1/3 cup of ketchup sauce. Toss onion rings with 2 tablespoons of ketchup sauce and place over meatloaf. Top with bacon slices and bake for 15 minutes. Reduce temperature to 350 degrees and bake until internal temperature reaches 160 degrees - about 50 more minutes. Let cool for 15 minutes. Serve with remaining sauce.
