Ingredients
- 2 tbsp olive or coconut oil
- 2 cups chopped sweet onion
- 1 large head chopped cauliflower
- clove garlic (optional)
- 2 cups diced apples
- 1 cup chopped walnuts
- 1 tsp curry power
- 1/2 tsp ground tumeric
- 32 oz vegetable stock
- 2 cups water
- 1 tbsp agave nectar
- 1 bunch chopped cilantro
- salt and pepper

Preparation
Step 1
Heat oil in 4 quart stockpot
Saute onion and cauliflower
Add garlic, apples, walnuts and spices and cook for 5 minutes
Add stock, water, agave and cilantro
Simmer until vegetables are fork tender
Season to taste and serve
