Carrot Cake

Ingredients

  • Icing:
  • 4 eggs
  • 2 cups sugar
  • 1 1/2 cups oil
  • 2 1/2 cups flour
  • 2 tsp salt
  • 2 tsp baking soda
  • 6 carrots (med) shredded
  • 1 1/2 cups walnuts
  • 1 cup rasins
  • 2 tsp cinnamon
  • 1/2 stick margrine
  • 1 (8-ounce) cream cheese
  • 2 cups confectioners sugar
  • 1-2 drops vanilla

Preparation

Step 1

Sift all dry ingredients.
Beat eggs and sugar.
Add oil, carrots, dry ingredients, raisins & walnuts.

Bake at 350 degrees for 1 hour
Cool in pans on racks for 10 minutes
Remove from pan and cool completely
