Ingredients
- 1 chicken (3-3 1/2 lbs. cut-up--I usually use the equivalent in whole chicken breasts w/bones)
- 1 rib celery sliced
- 2 medium carrots, sliced
- 2 medium onions, sliced
- 1 large clove garlic
- 1 tsp salt
- 1 tsp cumin
- 1/2 tsp oregano
- couple dashes of ground red pepper
- 2 cups cut green beans
- 2 cups com (frozen is fine)
- 1 (28 oz can) crushed tomatoes
- 1/4 cup chopped fresh cilantro
- juice of 1 fresh lime
- 6 cups of water (approx.)
- orzo or rice (optional)

Step 1
Cook chicken w/ seasonings of your choice for broth. If you use a pre-cooked chicken, take meat off of frame and then boil frame with seasonings for 1 hour .. skim fat off of broth, then add tomatoes, carrots, onions, celery, garlic and other spices. Also add chicken meat and boil for an hour at a simmer. During last 15 minutes add lime juice, green beans, corn & rice or orzo if you wish. Continue to simmer. Serve with lime slice and garnish with avocado slices.
