Chicken & Rice Casserole

Ingredients
- 1 (6 oz) package of long grain wild rice, cooked according to package directions
- Pam Cooking Spray
- 1 medium onion, peeled & diced
- 3 cups, cooked chicken, cubed
- 2 (14 1/2 oz) cans of French cut green beans
- 1 (8 oz) can of water chestnuts, diced
- 1 (4 oz) jar of pimentos
- 1 (10 3/4 oz) can of condensed cream of celery soup
- 1 cup of fat free mayonnaise
- 1 cup grated Cheddar cheese
- Pinch of Salt

Preparation
Step 1
1. Pre-heat oven to 350o F
2. Cook rice per directions
3. Cook chicken in hot water
4. Spray frying pan with Pam and sauté onion over medium heat, about 5 minutes
5. Remove onions from heat and place in large bowl
6. Add all remaining ingredients to large bowl and mix together until thoroughly combined
7. Pour mixture in greased, with Pam, 3 quart casserole dish
8. Bake 20 – 25 minutes or until bubbly
9. Let stand for a few minutes then serve
