- 2 cups (10 oz.) all-purpose flour
- 1 tsp. active dry yeast
- 1 tsp. cumin
- 1/2 tsp. sugar
- 1/4 tsp. salt
- 3/4 cup warm water
- canola oil for cooking

Step 1
1. In a large bowl, stir together the flour, yeast, cumin, sugar and salt; add 3/4 cup warm water and stir until the dough comes together. On a lightly floured surface, knead the dough for about 5 minutes, until smooth and elastic. Return the dough to the bowl and cover with a towel or plastic wrap and set aside for about an hour - until it doubles in size.
2. To cook the flatbreads, divide the dough into 12 balls and roll out each one on a lightly floured surface to about 8 inches in diameter (they won't be uniformly shaped).
3. Heat a generous drizzle of oil in a heavy skillet set over medium high heat and cook one at a time until puffed and golden, turning with tongs,about 1 minute each side. Transfer to paper towels to drain.
