Ingredients

  • 1/2 c. butter
  • 1 large green pepper, chopped
  • 1 large onion, chopped
  • 3 c. chopped cooked chicken
  • 1 (10oz) cans diced tomatoes with green chilies, drained
  • 2 (4.5oz) jars sliced mushrooms, drained
  • 1 (15oz) can peas, drained
  • 1 (15oz) can chicken broth
  • 1 (10.75oz) can cream mushroom soup
  • 1 (3.8oz) can sliced black olives, drained
  • 1 t. salt
  • 1 t. pepper
  • 2 (8oz) pkg. shredded sharp cheddar cheese
  • 2 (7oz) pkg. vermicelli broken into 2-inch pieces, cooked & drained

Step 1

Preheat oven to 350. Lightly greas a 4-qt. baking dish. In large Dutch oven, melt butter over medium heat. Add pepper and onion, and cook for 5 minutes. Stir in chicken, tomatoes, mushrooms, peas, broth, soup, olives, salt, & pepper. Add cheese, stirring until melted. Add vermicelli, tossing gently to combine. Spoon into prepared dish; bake for 30 minutes or until hot and bubbly.
