Ingredients
- 1 lb. dried Great Northern beans
- 1/2 lb. smoked bacon, coarsely chopped
- 1 medium onion, chopped
- 1/2 cup molasses
- 1/4 cup dark brown sugar
- 1/4 cup ketchup
- 1 Tbsp. dry mustard
- 2 tsp. kosher salt
- 1/8 tsp. ground cloves

Preparation
Step 1
1. Soak beans 12 hours or overnight. Drain and discard the liquid.
2. Place beans in a large Dutch oven and cover with cold water by 5 inches. Bring to boil, lower heat and simmer, uncovered, until tender (but not mushy), about 40 minutes. Drain carefully and reserve cooking liquid.
3. Preheat oven to 250 degrees F. Over medium high heat, sauté bacon in a Dutch oven, until crispy, about 6 minutes. Add onion and cook stirring, until lightly browned, about 5 minutes.
4. Add cooked beans, 4 cups of the reserved cooking water, molasses, brown sugar, ketchup, mustard powder, salt and ground cloves. Stir well and season to taste with salt and pepper. Bring to a boil on top of the stove, then cover and move to oven. Bake about 3 hours until thick and very fragrant. If getting too thick too quickly, add a bit of the remaining reserved cooking liquid.
5. Serve hot.
