  • 60 grams kosher salt
  • 11 grams Kombu
  • 1 teaspoon dried thyme
  • 2 teaspoons coriander seeds
  • 2 teaspoons fennel seeds
  • 2 allspice berries
  • 2 juniper berries
  • 1 teaspoon chili flakes
  • 2 cloves
