Ingredients
- Small Loaf:
- 3/4 cup water
- 1 1/2 cups white flour (bread flour or all purpose)
- 1/2 cup rye flour
- 1 1/2 tablespoons sugar
- 1 teaspoon salt
- 1 tablespoon butter
- 1 tablespoon cornmeal
- 2 teaspoons caraway seeds (less if you prefer)
- 2 teaspoons dry yeast
- Large Loaf:
- 1 1/4 cups water
- 2 1/2 cups white flour (bread flour or all purpose)
- 3/4 cup rye flour
- 3 tablespoons sugar
- 1 1/2 teaspoons salt
- 2 tablespoons cornmeal
- 1 tablespoon caraway seeds
- 1 tablespoon dry yeast

Preparation
Step 1
Place the ingredients in the pan of the auto bread machine in the order given.
Set the machine to the regular bake cycle if you want to bake the bread in the machine.
Otherwise, set the machine to the dough setting; when the dough is done, shape into either a round loaf or put the dough in a regular loaf pan (large loaf, 1 loaf pan and a small round.
Let rise, then bake at 375° 30-40 minutes or until the loaf sounds hollow when tapped.
If it is browning too much in the oven, cover loosely with foil.
