Ingredients

  • 4 veal cutlets (can use chicken)
  • 2 T flour
  • salt
  • black pepper
  • 1/4 c oil
  • 2 onions, sliced thin & seperated in rings
  • 1 can stewed tomatoes
  • mushrooms (use liquid)
  • 2 T snipped fresh parsley
  • 2 T capers
  • 2 cloves garlic, minced
  • 1/4 tsp oregano
  • 1/2 c wine

Preparation

Step 1

Coat meat & brown in oil, remove from pan

Saute onions until golden in same pan with crunchies from meat, deglaze pan with wine, scrape up goodies & add remaing ingredients. Put meat back in pan. Cover & cook slowly for 20-30 minutes.

Can be put in a casserole & bake in 325* oven for about an hour. Serve over hot buttered noodles.
