Ingredients

  • 8 ears fresh corn, cooked, cut from cob, and chilled
  • 1 jar roasted peppers (diced)
  • 1 c red onion, diced
  • 1/2 c cilantro, minced
  • 1 bay leaf
  • 10 oz. rice vinegar
  • 1 c sugar
  • 2 T whole grain mustard
  • 2 T minced garlic
  • 1 T sea salt
  • 2 tsp fresh gound pepper

Preparation

Step 1

Place corn in large glass bowl. Add peppers, onion and cilantro.

In a medium saucepan, add bay leaf, vinegar, sugar, mustard, garlic, salt and 1 tsp. pepper. Bring vinegar to boil. Reduce vinegar to a simmer for 10-12 mins. Stir sauce to prevent from busing. Remove sauce from the heat and discard bay leaf.

Fold sauce into the corn and chill for 30 mins.

Let salsa come to room temperature. Reseason with sea salt and pepper.
