Roasted peppers add a wonderful flavor to soups, stews, and sauces. I also love adding these to tacos, enchiladas, sloppy joes, and even using them to spice up other dishes.
1. Cut open peppers
2. Core peppers and lay flat
3. Press peppers flat on foil-lined sheet with skins up
4. Place under broiler for 5-10 minutes until skins are blackened evenly
5. Wrap peppers up in foil for 15 minutes to 1 hour (to soften)
6. Remove the skins and use your peppers
