Baked Pimento Cheese Dip

Ingredients
- 8-10 slices bacon
- 1 lb cheddar cheese (med. or sharp)
- 1 4-oz jar pimentos, well drained
- 1 cup mayo
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 1/2 tsp granulated garlic
- 1 bunch green onions, diced
- 1 cup crushed Ritz crackers

Preparation
Step 1
Cut bacon in 1/2" pieces, then cook until crispy. Drain on papertowel. Set aside.
Shred cheese, then add to a medium-sized mixing bowl. Add cooked bacon, pimentos, mayo, salt, cayenne pepper and garlic, then mix well until all ingredients are thoroughly incorporated. Fold in green onions.
Spread cheese mixture evenly into a medium-sized shallow baking dish (8x10 oval). Bake at 350 degrees for 20 minutes. Remove dish from oven. If necessary, blot up any excess oil from top using paper towels. The need to do this will depend on the quality of the cheese.
Sprinkle crushed crackers evenly on top of cheese and return dish to oven. Bake for an additional 20 minutes or until crackers are golden brown and cheese is bubbly.
Serve with crackers and/or celery sticks.
