- 2 tablespoons butter
- Zest of 1 lemon
- 1 cup uncooked rice
- 2 cups water
- 1/2 cup white wine
- 1 teaspoon salt
- Juice of 1 lemon

Step 1
Melt butter in a medium pot. Add lemon zest and rice. Sauté for 5 minutes until rice is opaque. Add water, wine, and salt. Bring to a boil, cover, then reduce heat. Let simmer 40 minutes or until liquid is absorbed
Add lemon juice; fluff with a fork.
