Ingredients
- 6 slices lean maple-smoked bacon, cut into 1-1/2 inch pieces
- 1/2 cup smooth peanut butter
- 4 scallions (white parts only), minced
- 2 Tbsp. lemon juice
- 2 tsp. Worcestershire sauce
- 3 Tbsp. mayonnaise
- 1 tsp. light brown sugar
- 9 slices whole-grain bread, crusts removed

Preparation
Step 1
Preheat the oven to 400 degrees F.
In a large skillet, fry the bacon pieces over moderate heat till almost crisp and drain on paper towels.
In a small bowl, combine the peanut butter, scallions, lemon juice, Worcestershire, 1 Tbsp. of the mayonnaise and brown sugar and stir till well blended.
Spread the remaining 2 Tbsp. mayonnaise lightly over the bread slices and spread equal amounts of the peanut butter mixture over the slices. Cut the slices into quarters and arrange on a baking sheet. Place a piece of bacon on top of each canape and bake till the bacon is fully crisp, about 10 minutes. Serve hot or at room temperature.
